Saturated fatty acids (SFAs) can vary considerably in how they influence blood lipid levels. Factors such as chain length—the number of carbon atoms (C) in a fatty acid—composition of the food source, and genetics can mediate their impact on cardiometabolic markers like low-density lipoprotein cholesterol. Although shifting dietary intake from SFAs to more monounsaturated or polyunsaturated fatty acids typically lowers LDL cholesterol, research indicates that not all saturated fatty acids function identically in the body.
