β-glucans are a family of naturally occurring fibers found in foods such as oats, barley, mushrooms, yeast, and some seaweeds. Dietary fiber is often divided into two broad types: insoluble and soluble.. Insoluble fiber adds bulk to stool and helps it move through the gut. Soluble fiber dissolves in gut fluid and can form a thick, gel-like mixture during digestion.
Many β-glucans belong to this soluble fiber group, but their properties can vary substantially depending on the source, which influences their effects in the body. One important mechanism underlying the health effects of soluble β-glucans is their interaction with the enterohepatic cycle.
